Our shop only procures tuna that is in excellent condition. We always offer our customers the highest quality tuna.

Oma tuna fishing is most active from October to mid-January. During this period, we source carefully selected tuna from Oma. Oma tuna is known for its tender texture and deep flavor. In other months, we do not specify the origin, but instead carefully select and procure the best tuna caught at that time.

Among tuna, the parts particularly known as "Tenpane" and "Tenten" are the deepest-flavored sections of the tuna's red meat. These parts are close to the bloodline, very tender, and intensely flavorful, making them the ultimate delicacy for customers who enjoy red meat.

At our shop, tuna is not merely sliced and served. We meticulously manage the tuna during its aging process to enhance its umami, ensuring that we deliver it to our customers at its most delicious moment. Aged tuna, with its rich flavor, becomes a masterpiece of sushi perfection.
