The fresh fish served at our restaurant are all exquisite ingredients carefully selected from Toyosu Market.

Among them, we especially recommend the supreme "tuna" sourced from "Yamayuki."

 

That tuna boasts exceptional fattiness and umami, allowing you to enjoy a profound flavor that you won't forget once you taste it.

 

Furthermore, from genuine octopus and seasonal white fish to the origin, season, and even the aging process,

we never compromise and always offer the finest ingredients in their peak seasonal condition.

 

To enhance the deliciousness of the toppings, we are also meticulously particular about the sushi rice (shari).

 

We use specially selected rice delivered directly from a rice master who has a thorough knowledge of rice,

and our chefs meticulously adjust the moisture content of each grain according to the temperature and humidity.

 

Through this masterful technique, the topping and the sushi rice maintain an exquisite balance,

creating a supreme dining experience where they unite in your mouth.

 

Furthermore, the dashi (broth) crafted by our chefs, utilizing their training in Kyoto, is another specialty unique to "Rantei."

The seasonal bowls, with their delicate aroma and umami of the dashi, further enhance the flavor of the course, making it exceptional.
