Our commitment to sushi begins with the selection of carefully selected high-quality rice. We cook fluffy rice that goes well with our carefully selected sushi toppings.
When cooking rice, pay close attention to the amount of water and heat to bring out the ideal stickiness and sweetness. Once cooked, the piping hot shari is transferred to a wooden hangiri made of cedar or cypress.The natural material absorbs excess moisture and adds a subtle woody aroma to the shari.
◼︎Addition of vinegar
First, the timing of adding sushi vinegar to freshly cooked sushi is important. While the shari is still hot and steaming, add the vinegar. This allows the vinegar flavor to be absorbed into the rice without escaping. We use our original sushi vinegar, which gives the sushi a delicate flavor and aroma. The amount of vinegar needs to be adjusted slightly depending on the temperature, humidity, amount of rice, and cooking condition.
The chef cuts the vinegar into the warm, freshly cooked rice so that it is evenly distributed. This allows the vinegar to thoroughly intertwine with the whole grain, creating a uniform flavor.
◼︎How to mix: “Mix as if cutting.”
This method involves inserting a rice scoop vertically into the rice bowl and lifting it up from the bottom to mix. By repeating this action, the vinegar will be distributed evenly without crushing the rice grains. Also, keep the rice scoop moist at all times to prevent rice from sticking.
◼︎Fangi
Another important element in the mixing process is the fan. By stirring the rice with a rice scoop and fanning it with a fan, you can evenly lower the temperature of the rice, lock in the aroma of the sushi vinegar, and remove excess water. This fanning process ensures that the sushi is fluffy but not too sticky, maintaining the ideal texture and flavor that sushi should have.

Once mixed, the shari is kept at the appropriate temperature. Shari tastes best at body temperature, so the key is to cool it appropriately. This temperature control plays an important role in bringing out the original taste of the ingredients. Our thorough commitment to sushi rice determines the "taste of sushi."
