Akagai (ark shell) is a type of sushi that captivates many gourmands with its intense aroma and unique texture. At our restaurant, "Rantei," we pay meticulous attention to every detail, from the selection to the preparation of akagai, to offer our customers the finest piece.
Commitment to Origin
At our restaurant, we primarily use akagai from Yuriage and Watanoha in Miyagi Prefecture. Akagai from these regions is rich in aroma and excellent in flavor.
Depending on the weather and daily conditions, we further select and have recently incorporated akagai from Yamaguchi and Osaka Prefectures. These regions also produce vibrant and beautiful akagai, offering a balance of aesthetic appeal and taste, so we choose the optimal one according to the situation.
Peak Season and Fishing Period
The deliciousness of akagai varies significantly with the season. Generally, akagai spawns from May to June, followed by a fishing ban in July and August. Fishing resumes in September, but the akagai in September, being soon after spawning, has not yet fully developed its inherent flavor. The most delicious period is from March to May, before spawning, when the akagai is firm and exceptionally flavorful. Especially, akagai from Yuriage peaks from late March to April, and those caught in deeper parts of the sea are often considered to be of high quality.
Preparation Techniques
The preparation of akagai is a crucial process to maximize its flavor and texture. First, the akagai is rubbed with an appropriate amount of salt to carefully remove dirt and slime. If the amount of salt or the rubbing method is not proper, the aroma can dissipate, or the flavor can be lost. The soaking time in water is also important; if too long, the umami will be lost. At our restaurant, we perform these steps with the utmost care to preserve the natural flavor of the akagai.

Freshness is paramount for akagai. Therefore, we also devise the timing of preparation. After preparing other ingredients, we prepare akagai as close to serving time as possible to maintain its freshness and deliver it to our customers in the best possible condition.
