Our restaurant offers the finest quality sea urchin (uni) carefully selected from Toyosu Market. Its golden glow is an appetizer in itself, and with just one bite, a creamy, rich taste of the ocean fills your mouth.

Since the taste and quality of sea urchin vary depending on the region, we always carefully select uni from the regions that offer the best taste during that particular season. For example, when high-quality uni is harvested in Aomori Shinane's Daichi, or in Hokkaido's Yoshioka-cho and Fukushima-cho, we source it from there.

Our "uni" is handled with meticulous care, ensuring that its natural flavor is preserved when it reaches our customers. Furthermore, we employ unique cooking methods to further enhance the uni's aroma. While it is served raw, a hint of grilling adds a delightful harmony of savory fragrance and creamy texture.


Our uni sushi boasts a perfect balance with the sushi rice. The carefully prepared sushi rice is adjusted to the optimal temperature and vinegar seasoning to enhance the uni's flavor. This allows you to experience the delicate taste of uni to its fullest.
