Ark shell from Yuriage, in particular, are at their prime from late March to April, and because they are harvested from deep waters, their flavor is exceptional. Ark shell that grow in deep water offer a unique, rich taste and firm texture.

However, if we can procure more delicious ark shell than those from Yuriage or Watari, we will carefully select and purchase those as well.
At our restaurant, we pay the utmost attention to the preparation of ark shell. When handling ark shell, we strive to preserve their inherent aroma and flavor by not using excessive salt and by carefully controlling the amount of salt used for massaging. If there is too much salt, the delicate flavor of the ark shell will be lost, so we also strictly manage the soaking time. Furthermore, because freshness is extremely important for ark shell compared to other ingredients, preparation is usually done last.
