Carefully Selected Conger Eel Production Areas
The conger eels we use at our restaurant are carefully selected from two production areas: Tsushima in Nagasaki and Edomae. However, 99% of our eels are from Tsushima. Tsushima eels, in particular, have established themselves as a brand, and their quality is top-notch. We specify the size, sourcing only the flavorful parts between 130 and 150 grams. This size specification allows us to maintain the optimal texture and taste for our customers.

Our Commitment to Broth
To enhance the deliciousness of our conger eel, we use fresh broth every time. While other sushi restaurants repeatedly add water and adjust the seasoning, we prepare a new batch of broth for each use. This fresh broth forms the base of our conger eel sauce (sweet and savory tare), maximizing its umami.

How We Make Our Sauce (Tare)
When making the tare, we add water, sake, soy sauce, and a small amount of sugar to the freshly prepared broth. Furthermore, we meticulously clean the conger eel bones, thoroughly removing any blood that could cause an unpleasant odor before adding them to the broth. We extract ample umami from the bones to create a rich tare. Just before serving, we lightly sear the conger eel skin and apply the tare. This process creates a perfect harmony between the aromatic crispness of the eel and the sweetness of the sauce.
Thorough Attention to Heat Control
We pay meticulous attention to heat control when simmering the conger eel. We finely adjust the heat depending on the size of the eel and simmer it in a completely wind-shielded environment to avoid any influence from drafts or air conditioning. This ensures consistent and stable heat, preparing the conger eel to perfection.
Balance with Shari (Sushi Rice)
Our shari has a light and refreshing taste, so we ensure that the conger eel tare maintains a delicate balance, neither too sweet nor too salty. We avoid excessive use of seasonings, focusing on bringing out the natural aroma and flavor of the conger eel. We finish it with a subtle yet richly flavored tare that doesn't overpower the eel's essence.
