・Juyondai Junmai Daiginjo Ryusen
"Ryusen," considered the pinnacle, is a Junmai Daiginjo sake made from Yamadanishiki sake rice polished down to 35%.
It undergoes extreme low-temperature fermentation, shizuku-tori tobinkakoi (drip collection in individual bottles), and is finished with ice-temperature aging.
Its brilliant aroma and deep umami pair exceptionally well with fatty tuna and high-quality white fish,
further enhancing the flavor of the sushi.
・Juyondai Junmai Daiginjo Ryūgetsu
"Ryūgetsu" is a premium Junmai Daiginjo sake, acclaimed alongside "Sōkō."
It is crafted using the luxurious "Nanatare Nijukkan" method and features a mellow flavor from ice-temperature aging.
Paired with delicate white fish or shellfish sushi, its elegant sweetness and umami harmonize beautifully,

・Juyondai Daiginjo Sōkō
"Sōkō" is a Daiginjo sake made from special Yamadanishiki rice polished to 35%, collected drop by drop using "Yugefune Nanatare Nijukkan," and aged at ice temperature.
It features a fruity aroma and mellow flavor that beautifully complements the delicate taste of sushi.
Its appeal is maximized particularly when paired with red-fleshed fish and shellfish.
