"Hidakami Yasuke" is a rich and dry Junmai Ginjo, with its name rooted in the Edo period's sushi culture. The president of Hidakami, deeply impressed by the sushi at "Komatsu Yasuke," a sushi restaurant in Ishikawa Prefecture, was inspired to create a sake specifically for "Komatsu Yasuke" sushi. This is how "Hidakami Yasuke" was born.
"Hidakami Yasuke" is a versatile sake that can be enjoyed with a wide range of sushi toppings, from delicate white fish to rich sea urchin and conger eel. For this reason, "Hidakami Yasuke" has been a staple offering at our restaurant since its opening.
